You know, I really like weekends.
This weekend we celebrated Caleb’s 30th birthday. Originally, we had a super low-key gathering planned at our usual spot, Southern Star Brewing. However, with all in the world, we kept it a party of 2, at home, completely feasting the day away. So, I suppose to clarify.. I really like party weekends!

Western Whole30 Frittata

I’ve been really obsessed with Colorado lately. So much that even my food is beginning to get the mile high flare. Did you know that Denver is called the Mile High City because the State Capital building is exactly a mile above sea level? 5,200+ feet high and still not the tallest city! Colorado Springs sits an entire 1,000 feet higher which must mean getting Vitamin D is easier, right? Plus, they have 300 days of sunshine a year which is pretty positive if you ask me.

So, why all of the Denver trivia? First, COVID has created a knowledge seeking monster in me. Second, a Western Omelette/ Frittata is another name for the classic Denver Omelette or Frittata! “Westerns” are made with diced ham, onion, and green bell peppers. Their signature flavor usually includes a cheese such as jack, cheddar, or Swiss but this Whole30 frittata variation uses Nutritional Yeast in it’s place!

Ingredients needed for this Western Whole30 Frittata:

  • Ghee, or another fat of choice
  • Eggs
  • Green bell peppers
  • Red onion
  • Diced ham
  • Coconut milk
  • Nutritional yeast
  • Salt
  • Pepper

Cheese or Dairy-Free?

If you’re wanting to keep this 100% dairy-free, follow the recipe to the last grain of salt! If you’re open to adding real cheese flavor, try “forking” in fresh shredded Monterrey Jack, Sharp or Mild Cheddar, or Swiss cheese just before placing it into the oven.

To “fork” in the cheese, simply sprinkle the cheese evenly over the runny (not firm) top and use the back of a fork to lightly press the shredded cheese into the frittata. Additionally, you can use any milk of choice in place of coconut milk as well as butter instead of ghee.

Whole30 Western Frittata

A Whole30 western frittata filled with red onion, green bell pepper, and diced ham in every bite! This crustless quiche-style breakfast is hearty and whole!

  • 1 tablespoon ghee
  • 1/2 cup red onion (diced)
  • 1/2 cupe green bell pepper (diced)
  • 1/2 cup diced ham
  • 8 eggs
  • 1/2 cup full fat coconut milk
  • 1 teaspoon nutritional yeast
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  1. Preheat oven to "broil".

  2. In an oven safe skillet, warm ghee on medium-high heat. Add onion and bell pepper. Cook until the raw edge is off, about 3-4 minutes. Reduce the heat to low and add the ham.

  3. In a mixing bowl, whisk together eggs, coconut milk, nutritional yeast, salt, and pepper. Pour into the skillet. Without stirring, cook skillet for 4-5 minutes.

  4. Transfer skillet to the oven's middle rack and cook for 3-4 minutes, or until the entire skillet is firm and the eggs on top are no longer liquid.
