Asparagus is that vegetable for me. I ate it every day for an entire year. Then, when we had Sunday steak night, I ate it twice nearly each Sunday.
Well, I found this trick: for every vegetable you swear by, but are so tired of, wrap it in bacon! Or, something like it it!
Let’s face it though, there’s not a whole lot I wouldn’t wrap in bacon.
This variation to the classic lemon pepper asparagus is life saving. Long gone are the day’s of boring asparagus detoxifying your body and HELLO to protein packed, healthy fat, and ridiculously delicious green spears!

Creamy Lemon Prosciutto Wrapped Asparagus
Ingredients
- 6 slices of prosciutto
- 18 spears of asparagus
- 1/4 cup mayonnaise
- Juice of 1/2 small lemon
- 1 clove garlic
- Pinch of pepper
- Pinch of salt
Other needs:
- 1 baking sheet
- Parchment paper
Directions
- Preheat oven to 400°F.
- Begin by washing and drying your asparagus. Remove the bottom inch of each spear with a knife. Separate and create 6 “stacks” of 3 spears.
- With eat spear together, wrap one slice of prosciutto around the stack and place onto a parchment lined baking sheet. Continue for each stack placing each one next to each other on the sheet pan.
- In a small mixing bowl, combine mayo, lemon, garlic, salt, and pepper. Stir to incorporate. Spoon sauce over the center of prosciutto wrapped asparagus, evening out with the back of a spoon.
- Bake in the oven for 15 minutes followed by 2-3 minutes of broiling.*
*Note: Cooking time is dependent on the thickness of your asparagus. The goal is to bake until just tender, followed by broiling to “bubble” and brown the lemon sauce.
