Monday Feels + Loaded Mashed Cauliflower

HI MONDAY, WELCOME BACK!

This past weekend was so busy. I know it’s impolite to brag but let me tell you, I worked my tail off.

Saturday, I recaulked my parents guest bathroom. First and foremost, YouTube and Pinterest makes it look SO MUCH easier. It’s such a process. First, you have to remove all of the existing caulk. Then, you scrub and bleach the gap between the tub and tile to make sure it’s completely clean with no weird life hiding in the cracks. Once it is completely dry, you very carefully line it with caulk, smoothing it out with a wet finger.
The challenge? Finding the right balance between a wet finger and a too wet finger. It was the perfect job for a perfectionist.

After that, I felt really handy so I started overstepping by pulling down lights, air vents, and even painted an entire wall. Robin and I have watched A LOT of HGTV.

Regardless of the super sore bicep (just one) this morning, I had such a great weekend!

Last week, I tested the waters a little by sharing a “Monday Feels” post and to my surprise, it was a hit according to WordPress! So, thank you!

My family got together on Saturday for dinner at BJ’s Restaurant and Brewhouse. I was beyond excited for their Ahi Tuna Salad (without the wonton strips) only to be tackled by the price. It’s been a while but I know I would have never paid $16.99 for a salad. I typically have that “one thing” at every restaurant so this definitely threw me out of my comfort zone. Not to fret, after a glass of wine and a few cheese curds, I was ready.

  • What I ate: Grilled Chicken Antipasto Salad
  • What I drank: I started with a Long Island and finished with a glass of Mark West’s Pinot Noir.
  • When in Rome: Monkey Bread Pizookie. Whoa.

GENERAL HOSPITAL IS ON POINT. Holy smokes. The last time I truly jumped out of my seat to THIS level was when Brenda came busting through the church doors at the exact moment Sonny was shot. She was supposedly dead so you can see how that was HUGE. Ryan is finally revealed and Franco has everyone’s feels! Taking the blame for all his serial killer crimes, Ryan (posing as his twin brother, Kevin) played right into Franco and the PCPD’s plan. Ryan got jealous, went to kill Franco, Franco escaped, made it home to Elizabeth, told her IT WAS ALL RYAN, and then passed out. Meanwhile, Ryan is frantically attempting to cover his tracks and as he is sorting through his box of victims (drivers licenses), pregnant Carly stands behind. No shocker there. She’ll end up kidnapped, taken to Niagara Falls ending in a crash with her daughter/friends who snuck out for a trip, and that’s how she’ll lose the baby and bring Jax back to the show. The new teenage girl we just met will end up dead and Jordan will get her kidney. The kicker, however, is when Ava finally learns she’s been bumping ugly’s with the man that murdered her daughter. In the words of Kevin heart, “IT’S. ABOUT. TO. GO. DOWN.”

You guys LOVED my broccoli salad! I meal prepped it last night and I was flooded with DM’s for the link and TWO people who said they had made it! That feeling. Gah. My heart.

My omelette making has calmed down. It seems that after about 13, 4 egg omelettes, eggs just get really tiring. This week’s menu consists of arugula salads tossed in my zesty Italian vinaigrette, broccoli salad, turkey burgers, and basic pan grilled chicken thighs.

I am still on the hunt for the perfect side dish to this weekend’s family crawfish boil. In the past, I’ve brought my no fuss shrimp dip but I’m feeling adventurous. What are your thoughts? If you have any recommendations, please leave them in the comments below!

Fashion update. I made the purchase and I am absolutely in love with my new Caramel Calvin Klein heals. After last week’s post, the price increases to $107 which pretty much consisted of my entire apparel budget. I watched it for a few days and by Friday, they were back down to $59! I also got these two other items:

Lastly, we must have food! After Saturday’s indulgent meal, I unknowingly fasted all day Sunday. Thankfully so because Kroger had T-bones on sale that we paired with a tweaked version of one of my Mom’s signature dishes, loaded mashed potato casserole, or “Potato Surprise”. Not quite sure why it was a surprise but we LOVE it even today. Nowadays, my parents follow a ketogenic approach so loaded cauliflower was the steaks best friend. It turned out really well and I’m not the least bit regretting or ashamed of the dairy.

Loaded Cauliflower Surprise

  • Servings: 4-6
  • Difficulty: Easy

Ingredients

  • One head of cauliflower, florets removed
  • 1/2 tablespoon ghee
  • 1/4 cup sour cream
  • 1/4 cup shredded cheddar cheese
  • 2-3 slices of cooked bacon, crumbled
  • 1 green onion, sliced
  • Salt
  • Pepper

Directions

  1. In a large pot, cover cauliflower with water and bring to a boil. Continue cooking until fork tender.
  2. Remove cauliflower from water and transfer to a blender. Add ghee, salt, and pepper. Blend until cauliflower resembles mashed potatoes. Add excess water from pot as necessary to thin out the mixture.
  3. Transfer mash to a serving dish and top with sour cream, cheese, bacon, and green onion.
