Bacon Wrapped Sweet Potato Sticks

I have to stop drinking coffee 30 minutes before bed. Better yet, I should look into tea. Sleepy time tea. What do you think? Does it make you sleepy?

This recipe is finally here! I wrote this down during a brainstorm in 2017! It was intended to inspire some fun tailgating appetizers with my Plantain Jalapeño Poppers but it became the perfect “back burner” dish due to it being so dang easy!

This recipe has taken a leap from “appetizer” to “breakfast” over in Kelly land. After putting it together, I placed it in an airtight container, separated by a paper towel (top row/bottom row) and let me tell you.. It was great with two poached eggs each morning. These sticks microwave quickly and although they do get a little soft when warming, they dip into the yolk perfectly. 

For an appetizer, I would suggest serving them with my Spicy Avocado Green Sauce or this Southwestern Sauce for a kick! I love a “sweet and salty” which really, really, works with a spice. 

If you’ve been with me for a minute, you know I never take the skins off of my potatoes. Part of it is pure laziness while the other part is the nutrients. I’m one of those people that still believe carrots and potato skins will make my eye sight better so I never skimp! For this recipe, I find it to be a benefit. With the skins on, the “sticks” have a firmer feel. I tested a few without the skin and they bent/ broke more as I picked them up. 

The ultimate key to keeping these sticks sturdy is the thickness. A quarter of an inch works perfectly. As the grease drips from the bacon, the potato will cook in it helping it become soft. If your slices are too thin, they will be bacon wrapped mush. If they’re too thick, you’ll just need to cook them longer which risks burning the bacon. Either way, you’re in for a real treat! Think “French fry” and I know they’ll turn out great for you!

Bacon Wrapped Sweet Potato Sticks

  1. Preheat oven to 350°F.
  2. Begin by slicing a thoroughly washed potato, length wise, in half. From there, continue slicing each half length wise, creating about a quarter inch thick “toasts”. Cut the toast in half/thirds to create sticks. The goal is to resemble french fries.
  3. Wrap each stick in a slice of bacon and place onto a baking sheet or in a large cast iron skillet. Bake for 30 minutes, flipping half way through.
  4. Remove sticks from the oven and let cook. Lay flat on a serving dish along side a spicy dipping sauce such as this spicy green sauce or southwestern sauce.
