Rosemary Dijon Chicken

Monday’s are fun but can you get any better than a holiday Monday?
Other than Christmas being on a Sunday, there’s not a whole lot!

This weekend was the absolute best! I spent it doing a lot of eating, a lot of drinking, and a lot of laughing. I talked a little bit in my last post about yearning for that “control” factor in life and I have to tell you, focusing on it has helped. Yesterday I woke up without any immediate food remorse and whoa, what a feeling.

We gathered at Buffalo Wild Wings on Saturday and I enjoyed all things wild. Cheese curds, boneless wings, fries, beer, and more beer. We laughed, watched football, and soaked up quality family time. Afterwards, my parents and I went bowling and I haven’t had that much fun in a while. I didn’t bowl worth a penny but the giggles were flowing and I feel like I worked my lower back and legs. Score!

The lack of remorse stems from the amount of “on” days I have vs “off” days and the hello awesome amount of time I have spent in the gym. This week marks the fourth gym week and I feel great! The routine is in full force and the consistency is giving me light. Similar to the commercial that starts with an alarm being snoozed, then grabbing a donut and coffee, taking the elevator, eating a burger, and having a salad for dinner. Then the next day, the alarm isn’t snoozed, he takes the stairs, he opts for a lighter lunch, and so forth. Somewhere in the mix is a product placement but the message is there. It starts with one change. You start parking at the end of the parking lot and walking and before you know it, that action leads to another. Isn’t that how habits are formed?

If you’re struggling to stay motivated this season, try swapping out one thing every day. Our office is located on the second floor and taking the stairs really isn’t a struggle and should be something I do daily. In addition to that, I like to park on a level that makes me walk.

Those actions, in addition to other consistencies, lead me to double thinking about the leftover halloween candy, margaritas, and chips and salsa. Being consistent has also helped me appreciate times like this weekend. Usually, by now I am full regret and completely calling myself out over and over. This time, I’m just dealing with the internal mess with a clear and accepting mind because I know one weekend will not make a difference. Now, all out fun Friday-Sunday on the other hand, may work against your positive weekly habits. Day by day, through consistent actions, we will meet our goals.

If that’s not “control”, I don’t know what is!

You guys, this recipe is coming out of the woodwork. Can you tell? You haven’t seen that apartment kitchen in forever. At least since we moved out in April. It’s been on my “to photograph” list for well over a year and.. Well, I just haven’t made it happen yet. AND, after hearing the feedback of “candid vs professional” food photos, I’m kind of not really that afraid of sharing low light, iPhone6, kitchen snaps anymore. We must have made this chicken 10+ times last fall. Yeah, that’s why it’s a kitchen shot (thank you day light savings).
It’s great on salads, meal prepped in the fridge, and shredded for lettuce wraps. It’s a really great grill option too! Similar to Caleb’s rocking chicken marinade, the coconut aminos really step it up a notch when the sugars burn a little. You can easily make this a sheet pan option with diced potatoes, broccoli, and onions.

Rosemary Dijon Chicken

  • Servings: 4

Ingredients

  • 1/4 cup olive oil
  • 1/4 cup coconut aminos
  • 1 tablespoon dijon mustard
  • 1 tablespoon minced garlic
  • 1 sprig fresh rosemary
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound chicken thighs, breasts, or tenders

Directions

    1. Combine all ingredients in a gallon size zip lock bag and marinate in the refrigerator for at least one hour.
    2. Cook chicken throughly by grill, skillet, or oven. Serve alongside WJ’s loaded mashed potatoes.
