Tostada Me Crazy: Cilantro-Lime Seafood Tostadas

Well, HELLO!

Happy February! I’m not sure where January went but man o’ man am I glad to be blessed to see another month! Things have been insanely busy, hence the silence in posts. Our next available weekend is April 21st. Literally. Oh wait, correction, my next available weekend is April 21st. Caleb has no more weekends. I’m not sure how he handles life. My glorious husband is a true freak of nature. He is by far the busiest person I have ever met and he’s totally calm about it. Not only is he calm about how he literally has no time of his own, he is incredibly patient with everyone who doesn’t realize it.

Part One:
He is an auditor in his civilian career. He travels most weeks with frequent overnight stays. He has one weekend a month in which he reports to his federal obligations, leaving him with 3 weekends. Sunday’s are for planning and prepping for the work week. How many Saturday’s does Caleb have to see his family and friends?

Caleb has 3 days a month for family, friends, and relaxation.

Part Two:
Caleb will relocate to Alabama in early April for up to 18 months. Between now and then, he is committed to 5 Saturdays. Caleb has 1 day left. Which I have now filled. How many available days does Caleb have?


Part Three:
Once arrived, he will begin studying to become a pilot. Every waking moment he will work towards that goal. During his free time, he will be studying, meal prepping, preparing his uniform, and planning everything he needs to do to reach his goal. Once a month, his wife will visit and he will focus on her while subconsciously repeating definitions, steps, and processes in his brain. When the time is over and he has graduated, Caleb will return home to his next task. Flight hours. Hours he will earn while returning to his civilian career, catching up with family and friends, settling into his home again, and get this– Returning BACK to school for either a second master’s degree or an entirely new undergraduate in an unrelated field. What is Caleb’s body language and behavior?

Freak. Of. Nature.

Heh, that was kind of fun yet extremely exhausting to think through. Can you feel my stress? I’m pretty much a ticking time bomb. With every person who reminds me of how long it’s been since seeing us, my ticker ticks more. Of course, the true underlining reason for my ticks are not that they asked, but rather because the next few years are going to be fun. Words can not describe how excited I am for Caleb. He is so dedicated to his (our) dreams and works every day to accomplish them. I can not admire him more. I have watched him do incredible things in the five short years we’ve known each other. I have watched him face so many challenges and celebrate so many victories. Time management is no battle for him. He does all of this stuff throughout the days, weeks, months, and years and still whoops my booty every week in our work week hustle! Every morning when the 4:50 alarm rings, I totally hope he doesn’t get up for the gym followed by his casual 2 mile stroll around the park. The guy is insane but he is the definition of humble. The perfect head of household and a natural born leader. So, if you’re a gal still looking for her partner, find one who is busy for the next 5 years but has the ability to center it all around you as if you’re the most important thing happening.

Man, all this Caleb boasting is making me crazy.. FOR TOSTADAS.

I love these little guys on the weekends when we’re on the go or after work when I can not wait for dinner. They’re so easy to make and you can play around with them to fill any craving you may have.

This creation is one of my top favorite along with cashew crème, salmon, and red onion. I used the seafood blend from Trader Joe’s but any seafood will work along with chicken if that’s your fancy!

Easily made with 15 minutes, you will love popping these little guys into your busy days!

Cilantro-Lime Seafood Tostadas
Servings: 1
Time: 15 minutes


  • 1 Tortilla of your choosing. I prefer the almond flour tortilla from Siete foods
  • 1/2 Teaspoon Ghee
  • 1/2 of an Avocado, mushed
  • Seafood Mixture
  • 1/2 of a Jalapeno
  • Cilantro

Seafood Mixture

  • 1/2 Teaspoon Ghee
  • 4 Ounces of Seafood
  • 1 Lime, juiced
  • 1 Tablespoon Cilantro, chopped
  • 1/4 Teaspoon Cumin
  • 1/4 Teaspoon Salt
  • Pepper to taste


  1. In a skillet, melt 1/2 teaspoon of ghee. Combine all of the seafood mixture ingredients and cook until the shrimp is opaque.
  2. In a clean skillet, melt the remaining ghee on medium-low heat. Add the tortilla to the skillet and cook until crisp, flipping to avoid burning. Remove and set aside.
  3. Once the tortilla is completely cool, assemble the tostada in the following order.
    • Tortilla
    • Avocado
    • Seafood blend
    • Jalapeno
    • Cilantro
  4. Cut into fours and enjoy!
