Enchiladas Al Carbon

Hello, happy Friday, and happy almost weekend!

Has this week flown by for you?
It has for me. I went to bed Monday and woke up to Thursday! The best week in a long time, most definitely. I work at a local Houston based financial institution where I monitor the solvency of existing borrowers by spreading financials and testing loan covenants. Hah, that description. Can you tell that I attend network functions? Many loans are tested on a quarterly basis and depending on the agreement, financials can be due 30 days from quarter end. Which leads to how incredible this week was! Being the last week of the month, there has been plenty to do! My days have flown by and I have enjoyed every moment of it. Are you in a position that you love? When my Dad and I went to Michigan at the beginning of June, I described my position to my Aunts and all I could express was how much I truly enjoy it. I think my exact words were something along the lines of, “I wake up and I’m ready to get to the office! I go home and hurry through my evening chores so that I can sleep well and wake up to go to the office!” I’m sure they thought I was nuts but I have never loved what I spend my days doing this much. There has always been something that didn’t vibe. So today’s “Wholesome Word”– Go find something that you love. If you are spending your days in a role that you hate or dislike, move on! Life goes by too quickly and we spend more time at work than we do with our families. I have friends who have made complete career changes. One went to school for accounting and three years later she is teaching second graders. She is my favorite example and I think of her often for being brave enough to take the leap and smart enough to recognize that her life wasn’t going to be what she wanted until she found happiness. I can’t imagine what it has done for all of the relationships and remaining components in her life.

Happiness. Go fine yours.

Alright, I’ll step off the soap box.
Speaking of soap, do any of you beautiful people watch General Hospital? Things are getting serious over there.
Now for the even more fun stuff!

ENCHILADA’S AL CARBON.
This recipe, has captured my life. A few months ago I tested this baby and in the proceeding months, I perfected it. It is my absolute favorite recipe to date and Caleb loves it as much as I do. Oh, and I pushed it on our close friend, Mike, who took a bite, paused, turned his head and said, “Ohhh.”

The best part about it is how incredibly easy it is. We have recently made Sunday evenings a “grilling night” in which Caleb gets saucy with all this protein and I relax with wine, and the 80’s station on Spotify, down by the grill. It has become my favorite night of the week. Especially because my Husband has mastered this chicken recipe to the point in which we bring everything back to the apartment and before we know it, it is completely gone. I am not kidding when I admit that we hover in the kitchen corner and barbarically eat this chicken with our hands. I’ve even been known to growl and “HUGH” at it a few times. It’s the best. Not to fret though, I’m working on him and I see a guest post coming in our future.

I am now making this recipe with the leftover “protein snacks”, as we call it, that Caleb grills and it has contributed to an even easier meal! Previously, I pan cooked chicken breast and cubed it. That method works perfectly but if you know that you may be interested in making this, double a week night chicken recipe and save the leftovers!

Additionally, this enchilada sauce is ready in 5 minutes and can be made in advance. We currently have a mason jar in our fridge that I have been adding to just about everything I eat. What can I say, I love my Mexican flavors.

I know you will love this recipe as much as we do.
I know I am repeating here but it is honestly my favorite recipe and it makes me feel so happy.

Enchiladas Al Carbon

  • Servings: 3-4
  • Difficulty: Easy
  • Print

Ingredients

  • 1 tablespoon ghee
  • 3 large chicken breast
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon cracked black pepper
  • Siete Grain Free Tortillas, or those of your choosing
  • Wholesome Joy’s Enchilada Sauce

Topping Ingredients

  • Fresh yellow onion, diced
  • Jalapeño, diced
  • Avocado, diced
  • Cilantro, snipped

Directions

  1. Preheat oven to 375°F.
  2. In a large skillet, warm ghee. While warming, season both sides of chicken with paprika, salt, and pepper. Cook chicken breast throughly and set aside. Once cooled, cut chicken into bite sized cubes.
  3. Heat tortillas in the microwave for 10 seconds to help them become more pliable.
  4. One by one, place chicken on the tortillas and roll into a cylinder. Place the tortilla, bottoms down, into the casserole dish. Continue until chicken is completely used or there is no room remaining in the dish.
  5. Bake for 7 minutes.
  6. Remove the casserole dish from the oven and pour Enchilada Sauce over the tacos.
  7. Return to oven and continue baking for 5 minutes.
  8. Remove and top with the toppings.
