Cinco de Mayo Faux Margaritas + Mexican Recipe Round Up

Happy May 5th!

Friends, this is truly one of my most favorite days of the year. On this day, no one can fight me when I suggest Mexican food for dinner. It’s glorious! I love this day with a passion!

I am ecstatic for tonight’s plans. Caleb will be out of town, so I am spending the weekend with my parents. I packed myself and Rosie up this morning and she is living it up with her best friends around the pool as we speak. A year and a half ago I bought this adorable black and white romper that was super festive for the day and I committed to wearing it last Cinco De Mayo. Unfortunately, I couldn’t get into the dang thing but this is my year! We are going to their favorite neighborhood restaurant and to say I am counting down the hours is a complete understatement. How am I to focus when I have fajitas in my future!?

If you’re staying in tonight but still wanting to party with the food, I have you covered! Here are my favorite Mexican inspired dishes.

  1. Fajitas Poblano
  2. Citrus Carnitas
  3. Chicken Fajita Skillet
  4. Chicken Verde
  5. Fresh Fish Ceviche

Some would say that it is no Cinco de Mayo without the ever so refreshing margarita but who says that it needs to be alcoholic? Or packed with mixes?

If you’re looking to join in the fun, yet not interested in the tequila, these easy faux margaritas are perfect for you. Not to mention, the basic margaritas will be perfect to order when out to dinner tonight.

Of course, a shot of 100% blue agave silver tequila never hurts either.

At least not until tomorrow.
